Sometimes I get bored eating salads with lettuce, so I make broccoli salad instead. It takes about five minutes to put together. It’s delicious and contains the most concentrated antioxidant, vitamin C!
Here’s what I throw in a medium size mixing bowl:
1/3 bag organic broccoli mix
3 tbs. vegan mayonnaise
A handful of organic raisins
- Mix it all up and put in the refrigerator or eat it right out of the bowl.
